Sweet & Spicy Rum Ribs Recipe

Ingredients

  • 4 packs of pork spare ribs (500g each)

  • 1 bunch of spring onions roughly chopped (keep the green stems)

  • 1 Scotch bonnet chili or habanero pepper (seeded and chopped)

  • 4 garlic cloves (chopped)

  • 6 tbsp rum (your choice)

  • 6 tbsp brown sugar (or demerara sugar if available)

  • 6 tbsp soy sauce

  • 6 tbsp clear honey

  • 6 tsp Dijon mustard

  • 1 tsp ground allspice

Instructions

Mix

Place the ribs in a large bowl. Add the spring onions, chilli, and garlic. Pour in the rum, soy sauce, honey, and mustard, then sprinkle with the sugar, allspice, salt, and pepper.

Marinate

Massage the mixture into the ribs until evenly coated. Cover tightly and refrigerate for up to 3 days, or freeze for later.

Grill & Glaze

Cook the ribs on a medium barbecue, turning often and basting with the leftover marinade as you go. Let each side caramelize, creating a sticky, flavorful crust. After 20-30 minutes, depending on rib size, they’re ready. If any sauce remains, warm it up and drizzle over just before serving.
