Ingredients

  • 2 large aubergines (pricked all over with a fork)

  • 1 tbsp olive oil

  • 1 large onion (thinly sliced)

  • 1 heaped tsp garlic granules

  • 2 tsp smoked paprika

  • 1 tbsp demerara sugar

  • 1 tsp dried oregano

  • 5 tbsp barbecue sauce

  • 400g can black beans (drained)

  • 4 burger buns (toasted and lightly buttered)

  • (Optional) Any burger toppings you’d like

Char & Cool

Fire up the grill to high heat and roast the aubergines, rotating occasionally, until their skin is charred and the insides are meltingly soft—roughly 20-30 minutes. Let them rest until cool enough to handle.

Sauté & Season

In a large oven-safe pan, heat olive oil over medium heat. Toss in the onion and cook, stirring now and then, until golden and tender—about 10 minutes. Meanwhile, preheat your oven to 200°C/180°C fan/gas 6.

Mash & Mix

Peel away and discard the aubergine skin, then scoop the soft flesh into the pan with the onions. Sprinkle in garlic granules, smoked paprika, demerara sugar, oregano, and a generous pinch of sea salt and black pepper. Stir until the spices are fragrant, then fold in the barbecue sauce and drained black beans.

Bake to Perfection

Transfer the pan to the oven and bake until the sauce thickens and clings to the aubergine, creating a rich, pulled texture—about 10-15 minutes.

Stack & Serve

Pile the smoky, saucy mixture onto toasted burger buns. Layer with red onion or pickled onion, crisp lettuce, and any extras you love. Serve with coleslaw and corn on the cob for a full-on BBQ experience. Dig in!
