Ingredients

  • 2 x 250g blocks halloumi cheese

  • 2 tbsp extra virgin olive oil

  • 1 tbsp dried wild oregano

  • Cracked black pepper (to taste)

Instructions

Prep the Halloumi

Submerge the halloumi in cold water and let it soak for at least 2 hours, or overnight for an even milder taste. Once soaked, pat dry with a paper towel. Slice each block into four long strips.

Assemble the Skewers

Slide the halloumi pieces onto metal skewers. If using wooden ones, be sure they’ve had a 10-minute soak to prevent burning. Drizzle the skewered cheese with olive oil, ensuring each piece gets a nice coating. Sprinkle oregano generously, followed by a few cracks of black pepper.

Grill to Perfection

Get your barbecue sizzling hot, or fire up a griddle pan on high heat (preferably, on a rocket stove). Lay the skewers on the grill and cook for 2-3 minutes per side, flipping carefully to achieve a golden, slightly charred exterior.

Serve and Enjoy

Once beautifully grilled, transfer the skewers to a platter. Serve immediately with your favorite dips or sauces. These are best enjoyed fresh off the grill!
